Corn Salsa

Ingredients

Add frozen corn, thawed to shopping list 1 cup frozen corn, thawed

Add green pepper, chopped to shopping list 1/2 cup green pepper, chopped

Add red onion, chopped to shopping list 1/4 cup red onion, chopped

Add fresh parsley, minced to shopping list 2 teaspoons fresh parsley, minced

Add lime juice to shopping list 1 tablespoon lime juice

Add garlic, minced to shopping list 1 clove garlic, minced

Add salt to shopping list 1/8 teaspoon salt

Add pepper to shopping list 1/8 teaspoon pepper

Directions:

In a bowl combine corn, green pepper, onion, parsley, juice, garlic, salt and pepper; mix well. Chill for at least 2 hours to blend flavors. Serve with fish.
