Sierra Snow Cap

Yield: Makes 4 to 6 servings

Ingredients

Add apricots to shopping list 1-1/4 cups apricots

Add water to shopping list 1-1/4 cups water

Add sugar to shopping list 1/2 cup sugar

Add egg whites, unbeaten to shopping list 5 egg whites, unbeaten

Add salt to shopping list 1/4 teaspoon salt

Add brandy (or 1/4 tsp. almond extract ) to shopping list 3 to 4 tablespoons brandy (or 1/4 tsp. almond extract )

Directions:

Cook apricots in water 10 minutes, until soft. Cool. Drain and measure 1 cup.

Chop and combine with sugar, egg whites and salt in top of double boiler. Beat over boiling water with rotary beater until thick enough to hold its shape about 5 minutes. Remove from heat; gently fold in brandy. Serve warm or cold, garnished with reserved apricots.
